Two Easy And Healthy Oil Free Preparations Of Chicken
Chicken are easily available thing and in comparison to other meat it is healthier. Here are two easy recipes that may help you to prepare food for the patients.
Oil-Free Chicken Curry
Ingredients
• 500 grams boneless chicken
• 2 onion
• 7-8 cloves of garlic
• ½ ginger
• ½ cup yogurt
• Pinch of turmeric
• 2-3 green chili
• 2 cloves
• 2 cardamom
• 1 inch cinnamon
• 1/4th of a nutmeg
• Coriander / parsley/capsicum
• Salt
• Sugar
Preparation:
Wash chicken well and cut them into small pieces. Make fine paste of ginger, garlic and onion. Add pinch of turmeric in it and mix them well. Crush all those cloves, cinnamon, cardamom and nutmeg into fine powder. Beat yogurt very well. Then in a large container mix every thing. Do not forget to mix salt to taste and pinch of sugar. Add chicken pieces in it and stir to mix them in the spices well. Marinate them in the marinade for 10 -12 hours to make the chicken soft. Yogurt helps to make the chicken soft.
Process:
After the marination period is over cook chicken in a non stick pan. You will have to stir continuously so that the preparation does not get burnt. When the preparation is turned to thick gravy and the chicken already get tender, finely chop any of the items (coriander/parsley/ capsicum) and add it to the preparation for flavor.
Add green chili also for flavor. Then remove it from heat and keep the lid on. Serve it hot with steamed rice.You can also make the preparation with mutton or lamb.
Chicken with Cabbage
This is also another oil free preparation of chicken that are nutritious and healthy especially those are suffering from cardiac diseases. To make this preparation you need breast portion of chicken. Boil it till it gets tender. Drain the water and preserve it in another container. After that from that portion remove small chicken flakes.
Then chop cabbage in small pieces. Now heat that water again in which you earlier boiled the chicken. Then add onion flakes and minced garlic in it. Let them boil. Add chicken flakes and cabbage in it. Add salt in it. Let them boil. When the cabbage gets soft, sprinkle freshly ground black pepper in it. Remove it from heat. Serve it hot with fresh bread.
