Tortilla wraps with spicy chicken filling
If you are running out of lunch box ideas, why not try this delicious recipe of tortilla wraps.These wraps are best served warm.
Ingredients:
Four tortilla wraps
200 grams boneless chicken
One green capsicum
Two medium onions
Few sprigs of fresh coriander leaves
Three teaspoons of Ginger- Garlic paste
Half teaspoon turmeric powder
Two teaspoons garam masala
One tablespoon of kashmiri chilli powder or mild cayenne pepper
One tablespoon vineger
One tablespoon yoghurt
Two teaspoon lime juice
Salt to taste
Cooking oil
Preparation:
Clean and cut the boneless chicken into one inch square pieces.Prepare a marinade by mixing chilli powder, two teaspoons of ginger-garlic paste, yoghurt, half the vineger, salt and turmeric powder. Coat the chicken with marinade and leave for 30 minutes. Meanwhile cut the onions and capsicum into thin long strips. Preheat the oven and place the chicken on a baking tray. Drizzle some oil and grill for 20 minutes.
When it is ready,the top of the chicken will look like char-grilled. Check if the chicken is properly cooked and remove from grill.
Heat one tablespoon of oil in a pan and fry half the onions till they become light in colour.Add the ginger-garlic paste and garam masala and fry for 2- 3 minutes. Add the grilled chicken and saute for 2-3 minutes.Add little water and the remaining vinegar. Check salt and cook covered for 7-10 minutes.
Add more water if needed so that the dish is not dry. The gravy should coat the chicken and must be semi-dry. Add capsicums and stir for a few minutes till the capsicums are lightly cooked, but not overcooked. Switch off the stove and sprinkle with lime juice and finely chopped coriander leaves.
Warm the tortillas and place few spoons of the chicken filling. Top with fresh onion stips springled with lime juice.Wrap it up and enjoy your yummy and filling lunch.
You may prepare the filling in advance and use as needed.

Ingredients:
200 grams cottage cheese
one large tomato
one medium onion
1/2 teaspoon fresh ginger (chopped fine)
one green capsicum
one teaspoon cayenne pepper
1/2 teaspoon turmeric powder
one teaspoon curry powder or garam masala
1/2 teasppon cumin powder
Fresh coriander leaves
Oil
Salt to taste
Preparation:
Slice the onions and capsicum into thin long slices. chop the tomatoes fine. Cut the cottage cheese into small squares. Heat one tablesppon oil in a pan and add the ginger followed by onions. Fry till golden brown and add the tomatoes.Saute well till tomatoes are well cooked.
Add the capsicum and saute for 2 minutes. Add the spices, salt and fry for 2 minutes.Put the cottage cheese and finely chopped fresh coriander leaves. Saute for few minutes till the cottage cheese becomes soft and is blended well with the spices.
Warm the tortillas and fill with the cottage cheese mixture.Top with freshly chopped onions. Wrap it up and enjoy the simple, but delicious meal.
