Sponge Cake Recipe
All set for the New year celebrations? Here’s a final touch to the preparations with a Sponge cake. As you may not wish to stay away while all others are partying around, this quick recipe will help you surprise them with a festive sponge cake.
For cake:
1 cup all purpose flour
1 cup corn-starch
6 eggs, separated
2 cups sugar
½ teaspoon salt
1 teaspoon baking powder
1 ½ tablespoon pure vanilla extract
For topping:
1 ½ – 2 cups heavy whipping cream
4-5 tablespoon sugar
1 ½ teaspoon imitation rum extract
For filling and decoration:
Pineapple chunks
Pineapple juice
10-12 Cherries
Sugar syrup – ¾ cup sugar in ½ cup water
Mode of preparation:
1. Sift the flour and cornstarch mixing, baking powder and salt. Keep aside to set. Grease an appropriate baking pan and heat the oven to 350 degree F.
2. Use an electric mixer (or manual blender) to whip the egg yolks with the vanilla extract and 1 cup sugar, vigorously until it turns thick and yellow. Transfer to another bowl as you will need the blender afresh. It should be dry before use.Now beat the egg whites with the remaining 1 cup sugar for about 4-5 minutes to get a glossy, stiff mixture.
3. Fold the egg-yolk solution into the beaten whites and softly blend with a spatula. Gradually introduce the readied flour mixture into this with 4 or 5 repeated additions to blend in well.Now it is time to shift the batter into the baking pan and glaze the top using a flat spatula.
4. Bake for around 40- 45 minutes or until you can easily pierce through it and get back a toothpick spotless. Once baked, let it cool completely. You can shift it to a cooling rack after 10 minutes of cooling in room temperature.
5. You need a chilled bowl next. Whip vigorously the heavy cream and sugar for 3-4 minutes. Add the rum extract which is optional. You will see a soft peaked snow mountain. Finally cut the cake horizontally into 2/3 layers. Drizzle some pineapple juice and sugar syrup on top of the bottom most layer.
6. Spread a layer of icing with the pineapple chunks. Place the second layer and repeat this process. Poke the even-top of the final layer of cake with fork and sprinkle excess of pineapple sugar and sweet-syrup. Coat the icing and decorate with cherries, pineapple chunks and cream.
