Savor Dinner With Healthy Soup Recipes

Oatmeal Soup
For this, all you need is:
½ cup oatmeal
1 cup carrot, cut into cubes
1 cup potatoes cut into cubes
1 cup onion cut into cubes
1 cup milk
3 dessert spoon butter
5 cups chicken stock
Salt – according to taste.
Preparation:
1. Before you start, make sure you have readied the chicken stock or use stock cubes/powder. Heat a saucepan to melt the butter. Add the oatmeal and stir till the color changes slightly. Sauté with the onions for a minute and add the potatoes and carrots.
2. Once the vegetables are wilted, pour in 3 cups of the chicken stock to boil. Reduce to simmer and cook the veggies for about 20-25 minutes so that the vegetables can easily be mashed to extract the nutritional factors completely.
3. Strain or liquidize. Add the remaining stock. Sprinkle salt to taste. Add some boiling hot milk just before you serve.
Fluffy Pumpkin Soup
Ingredients:
3 cups pumpkin, cut into cubes
1 big onion, sliced
2 carrots diced
1 ½ cups vegetable stock
1 teaspoon ground cinnamon
3 cups soy milk
¼ cup soy yogurt
Preparation:
1. In a large saucepan, add the vegetable stock along with the vegetables. Heat until it boils. Now you have to simmer for about 20 minutes. Make sure that the vegetables are tender by now.
2. Take out the vegetables and blend it to make a fluffy mixture. Return this to the soup, add cinnamon and milk stirring gently. Simmer for another 10 minutes.
3. Add spoonful of soya yogurt into each bowl before serving.
Gaudy Green Soup
You will need:
10 cups spinach
2 medium onions, chopped
2 potatoes, chopped
3 cups vegetable stock
Making:
1. Wash and shred the spinach. Remember to separate any tough stalks. Boil the stock in a pan on low flame.
2. Add the vegetables. Simmer for another 15 minutes and season. Blend and serve this either hot or chill to relish.
