Recipe for Barbecue(BBQ) Chicken

Step 1: Cut the chicken into smaller pieces like thighs and breasts. Rinse them properly in water and trim off extra fat and skin. Cleanliness must not be sacrificed at any cost. It is better to get rid of excess skin as it will give you more fat. Make equal portions of chicken so that they get evenly cooked. It is required to marinate these parts overnight. Marinade can be of any choice. Place marinade in leak proof container. Put it in refrigerator. Marinating is required to keep chicken juicy and flavorful on the grill.
Step 2: Now take out the chicken parts and place it on flat container. Sprinkle some barbecue rub to the parts of chicken. One of the best pair with classic barbeque sauce is the mesquite rub. Now put the chicken on the grill over charcoal. Try to place charcoal on one side of grill. Other side should be left for the chicken. Cook the chicken for 30 minutes, turning every five. Keep on rotating so that hot and cool spots on the grill are balanced properly. You need to check with meat thermometer after 25 minutes.
Step 3: Until the chicken is done you should not use sauces to it as their sugar content make them burn. This is the only reason why we get chicken that is black outside and raw inside. So Brush the grilled chicken with standard barbecue sauce about 10 minutes before removing the chicken form the grill.
