Quick and Easy Entree Salads
Most of the people today have a busy lifestyle and are in a hurry most of the time. In their busy schedule, people get very little time to prepare delicious meals for their family. Thus, quick and easy entree salad recipes are a great option.
The below given chicken and seafood salad recipes are not just easy to prepare but extremely delicious as well.
Easy Seafood Salad
Sea Scallops (1/2 lb)
Peeled and Deveined Medium Shrimps (1 lb)
Crab meat, Shell pieces removed (1/2 lb)
Fresh Cilantro, Minced (1/4 cup)
Seeded tomatoes, Diced (1 ½ cup)
Green Onions (3 tbsp)
Jalapeno Pepper, Minced (1 tbsp)
Fresh Lime Juice (3 tbsp)
Gourmet Salad Greens (6 cups)
Steam the scallops and shrimps for a minimum of 6 minutes or till they are done completely. Allow them to cool down completely. Next, cut the scallops and shrimps in quarters. Now mix together scallops, shrimps, tomato, cilantro, crab meat, lime juice, jalapeno pepper and green onions in a bowl. For serving, spread this mixture over salad greens.
Toasted Almond and Asparagus Chicken Salad
Asparagus, cut into 1 inch pieces (2 ½ cups)
Mayonnaise (1/4 cup)
Low fat yogurt (1/4 cup)
Curry powder (1 tsp)
Lemon Juice (1 tsp)
Salt (1/4 tsp)
Pepper (1/8 tsp)
Roasted chicken breasts, chopped (2 cups)
Red bell pepper, chopped (1/3 cup)
Fresh Parsley, chopped (1/4 cup)
Toasted Almonds, sliced (2 tbsp)
Steam the asparagus till it becomes crisp tender. This will take a couple of minutes approximately. Mix together yogurt, mayonnaise, curry powder, lemon juice, pepper and salt in a big sized bowl and mix well with the help of a wire whisk. Now add the bell peppers, almonds, parsley, chicken and asparagus into the mixture and toss to coat it completely.
These salads are not just quick and easy to prepare, but also a great way to make use of leftover turkey or chicken. You can also prepare some extra chicken breasts while cooking another dish, refrigerate and use after a couple of days to prepare these salads. So, even if you are short of time, you can still enjoy delicious meals without the need to spend too much time cooking.
