Knowing how microwave works may clarify this doubt. Microwave cooks food by dielectric heating. Heat is produced to cook food out of absorption of microwave energy from water molecules present in the food. Lesser amount of water is required while cooking in microwave than conventional cooking. Microwaves are different from particle-ionized radiation found in x-rays. They are actually non-ionizing electromagnetic waves that pass through food to produce heat and cook.
Heat reduces level of certain nutrients in any method of cooking. But there are other factors that should also be taken into account. Longer cooking time and use of excess water removes the nutritional benefits from the food. Studies show that microwave cooking helps to retain the nutrient better than other methods. The available research very well establish the fact that microwave cooking is not only fast, easy and cost effective, it benefits us by providing healthy food because in microwave food is cooked by its own natural juices. We can prepare healthy and tasty, hassle free, clean and smokeless food within a few minutes after knowing its correct usage.
