Planning meals using your leftover food can help in saving a lot of time as well as money. It is natural for all of us to have leftovers after almost each meal. Many people consider leftovers as very useful whereas others avoid having them at all. However, the best possible way to look at them is a way to save effort, time and money. Beef
If you have some leftover beef, use it to make shepherd’s pie. Mix this cooked beef with peas, carrots, and baby corn in a base of white sauce or homemade gravy. Top the shepherd’s pie with shredded cheese and mashed potatoes to make a delectable dish.
Chicken
You can make various innovative dishes using leftover cooked chicken. Mix cooked shredded chicken with refried beans, sliced green and red bell peppers, green onions, sour cream and salsa. Stuff the mixture in tortillas or wraps to make delicious quesadillas. Alternatively, you can make stuffed green peppers, stuffed tomatoes or honeydew half using cooked chicken cubes mixed with celery, grapes, some curry powder, mayonnaise and some bottled chutney. Another great recipe using leftover chicken is pot pie which can be made using cooked chicken, chicken broth, white sauce, biscuit dough and stewing vegetables.
Fish
If you have some leftover cooked catfish, salmon or other such fishes at home, then you can create delicious burritos using them. To do this, stuff the burrito using sliced scallions, cucumbers, tomatoes, beans, lettuce, cheese and sour cream along with a dash of lime juice. Wrap the entire stuffing in a wrap or tortilla. You can also make baked fish cake by mixing the flaked fish with green onions, bell peppers, celery, egg white and some mayonnaise. Make small patties and serve.
Turkey
With leftover turkey, you can create some wonderful meals such as barbecue turkey pizza, stir fried turkey, and Mexican style soup. Use cooked turkey with celery, green onions, black beans, mozzarella cheese and barbecue sauce, spread over pizza base and make a barbecue pizza. You can also make Mexican soup with cooked turkey roast, turkey sausages, chicken broth, lima and garbanzo beans, spinach, tomatoes and salsa.
