Almond Spice Cake
Ingredients
Sugar (1/2 cup)
Pureed Prunes (1/2 cup)
Margarine (3 tbsp)
Almond extract (1/2 tsp)
Egg white (2 nos.)
Egg (1 no.)
All Purpose Flour (1½ cup)
Baking Powder (2 tsp)
Ground Allspice (1/2 tsp)
Salt (1/4 tsp)
Skimmed milk (1/4 cup)
Instructions
Preheat the over to a temperature of 350 degrees. Coat the baking dish with low fat cooking spray. Beat prune puree with sugar, margarine and almond extract using an electric mixer. Also beat an egg and egg whites separately. In another bowl, mix flour, all spice, salt and baking powder. Now add this mixture to the prune mixture along with milk. Pour the batter into the greased baking dish and bake till a knife comes out clean from the cake. Allow the cake to cool and then turn it for icing using low fat whipped cream and fresh prunes.
Using prunes adds moisture and a sweet taste to the cake along with additional fibers and vitamins.
Low Fat Carrot Cake
Ingredients
Shredded Carrots (1 cup)
Self raising flour (1/4 cup)
Cinnamon powder (2 tsp)
Sugar (1/3 cup)
Desiccated coconut (1 cup)
Chopped walnuts (1/2 cup)
Eggs (2 nos.)
Vanilla Extract (1/2 tsp)
Butter (1/2 cup)
Vegetable oil (1/4 cup)
Instructions
Grease a baking dish and pre-heat the oven to a temperature of 350 degree Fahrenheit. Sift cinnamon powder and flour together and add carrots, coconut, walnuts and sugar to it. In a different bowl, mix beaten eggs, vanilla extract, butter and oil together and add it to the flour mix. Mix well and pour into the greased baking dish and bake for about 45 minutes or till it becomes firm. Allow it to cool and then turn onto a wire rack. Serve after cutting into small pieces.
