French Onion Soup
This robust French onion soup is ideal as a starter item or for an afternoon snacks. You may add a toast or salad with this, to make a simple but healthy meal, as it is going to be low in fat and sodium. Onions are going to be the source of vitamin C and also going to add the savory flavor to make the soup more delicious. Following are the list of ingredients required to prepare the soup for 4 servings.
3 cups of thinly sliced onions
1 ½ teaspoons olive oil
¼ teaspoon dried thyme
2 cloves garlic, minced
2 ½ teaspoons all-purpose flour
2 cups water
1 cup low-sodium chicken or beef broth
1/8 teaspoon ground nutmeg
4 thin slices French bread, toasted
1 tablespoon grated Parmesan cheese
2 tablespoons grated Swiss cheese
To start with, take a large non-stick skillet and put it over the oven. Heat the olive oil over medium heat and then add onions and thyme. Add 1 tablespoon of water with this and cover to cook. After 5 minutes, reduce the heat to medium-low and uncover the skillet. Stir the onions frequently and cook till it turns to be golden.
Add the minced garlic to the skillet and sauté for a minute. Now reducing the heat to low, add the flour and stir for 2 minutes. Along with this, stir in the broth, ground nutmeg and the remaining part of the water. Increase the heat to medium to bring the mixture to boil. As soon as it starts to foam, you should again reduce the heat to low. Now cover the skillet and simmer for another 30 minutes.
Preheat the broiler. When the soup is ready, ladle it into 4 soup bowls. Put the toasted French bread on the soup for each bowl and sprinkle it with the grated Swiss and Parmesan cheese. Place these soup bowls on baking sheet and let it broil for at least 1 minute until the cheese starts bubbling. Serve the soup in piping hot condition.
You may prepare the soup in advance, other than the garnishing part. After preparing the soup, you should allow it to cool prior to refrigerating. You can store this soup for up to 3 days in the refrigerator. At the time of serving, you should warm the soup first and then complete the garnishing procedure.
