Few Easy and Healthy Potato Recipes
It is oft said that potatoes make you fat. But, actually potatoes are healthy as long as they are cooked and consumed in a healthy and nutritious manner. However, when mixed with fat (i.e., deep friend in oil), they are disastrous for the body. Potatoes are a carbohydrate which give energy and thus should form part of a regular diet.
Spicy Tossed Potatoes
This is a very easy recipe as it does not require much cooking, and makes a nutritious mid day snack.
Ingredients
4 large boiled potatoes
1 small onion, finely chopped
1 tomato, finely chopped
¼ cup fresh coriander leaves, finely chopped
1 green chilly, finely chopped
Salt and pepper
½ teaspoon red chilly powder
Juice of 1 lemon
1 teaspoon Indian chaat masala(optional)
Method
Once the potatoes have cooled down, peel and chop them into bite sized chunks. Toss with all the ingredients and serve cold. Please note that once this dish is made, the potatoes should be kept covered in the fridge as keeping them open will cause them to dry up.
Potato Salad
This is an easy-to-make salad that has no oil as it uses hung yogurt as a dressing. It works well as an accompaniment to any main casserole.
Ingredients
4 large boiled potatoes
1 small onion, finely chopped
1 capsicum, finely chopped
¼ cup fresh dill leaves, finely chopped
1 green chilly, finely chopped (optional)
Salt and pepper
1 cup hung yogurt (to be made from 1 ½ cup of regular yogurt)
Method
To make hung yogurt, regular yogurt should be placed in a thin muslin cloth and tied into a pouch. Hang up this pouch for the excess water to drip out. Once the water has stopped dripping, take the yogurt out of the cloth and transfer to a bowl. Beat this yogurt well (with a hand beater) to make a smooth paste. Once the potatoes have cooled down, peel and chop the potatoes into bite sized chunks. Toss the potatoes, yogurt and other ingredients together. Serve cold.
