Curried Prawn Recipe
Gone are the days when a recipe was confined to a particular mode. Interestingly, today we are blessed with ‘Freedom of Recipe’. Let us check out this exciting recipe for a zesty prawn curry to relish with.
Take half a coconut shell with the eyes. Drill through one of the eyes.
Coconut paste – grind half a coconut with few cumin seeds and a pinch of turmeric powder.
Curry powder – mixture of 2 teaspoon coriander powder, 1 and 1/2 teaspoon chili powder,
1/4 teaspoon turmeric powder, a pinch each of fennel powder, cinnamon and cardamom powder.
Cleaned and peeled prawns- 350 to 400g.
Cooking oil (coconut oil preferred) – 1 and 1/2 tablespoon.
Ginger-garlic paste – 2 tablespoons.
Chopped onions – 3 of which a few chunks be kept apart for later use.
Red (bell) pepper – half of this should be chopped and half cut into strips.
Chopped tomatoes – 4 medium sized.
Chopped fresh Cilantro – 3 tablespoons.
Salt and pepper – to taste
Water – as required
Place the pressure cooker with water on high flame. Instead of the weight, place the shell onto the pressure valve, fixing it through the ‘open eye’.Put the prawns in the shell closing it with a tight fitting lid. Steam this for about 15 minutes. Repeat the process till all the prawns are steamed appropriately.
Heat a frying pan, add a little oil. Saute the onions. Next, saute the ginger-garlic paste. Add the coconut paste, fry till the raw smell leaves. Add the chopped red pepper and mix till wilted. Season with the spicy curry powder.
Mix for a while. Add the tomatoes, fry them till they blend in completely. Put the salt and pepper to taste. Add some water (say, three-fourth of a cup) and bring to boil. Simmer, allow the gravy to thicken to desired consistency.
Fry the pepper strips and onion chunks briefly in another pan. Add this to the main pan, once the curry acquires the sought consistency. Turn the flame high at once; add the steamed prawns and the chopped cilantro. Close with a lid and switch off the flame. Do not open for the next 4 to 5 minutes. A delicious prawn curry is ready to be served.
This curry blends well with rice, and bread. Remember, the highlight here to be the steaming taste of ‘coconut shell flavored prawns’. Happy cooking!
